This is a really easy stew to make and it tastes amazing. I came up with this stew because one day my boyfriend said that his body was craving spinach. We had just finished a meal containing spinach and he liked it so much that he was sure it was because his body was craving it.
I thought that was a really healthy craving to have, so I created this dish to give him some more spinach 🙂
It can be served with rice or potatoes, maybe even pasta, I just haven’t tried that yet. If you choose to bake potatoes in the oven, then start baking them well in advance, because this stew is really quick to make.
You can of course swap the canned kidney beans with beans that you have soaked and boiled your self. I always keep a few canned once in case I don’t have any more home cooked once in the freezer, but on this particular day i used the canned once.
So lets get to the recipe:
Paprika Stew With Spinach
Serves 4 people
200g fresh spinach
2 cloves of garlic
1 can of coconut milk (400ml)
1 can of tomatoes (400g)
1 can of kidney beans (250g drained)
2 tbsp sweet paprika powder
1 tsp salt
½ tbsp white wine vinegar
Chop onion and garlic and fry them on a pan. Add the spinach and fry them till they are soft.
Add the rest of the ingredients and let it all simmer for a few minutes.
You can serve it with rice or potatoes baked in the oven.
