Cold potato salad

It’s summertime and you don’t feel like eating a warm meal, then this is the perfect thing for you 😉

I came up with this recipe on one of those warm days and I had some boiled potatoes left from the day before, and since we love hummus, i made a hummus like dressing to add to the potatoes.

This will taste great on its own or served with bread and a fresh salt, but you can also use it as a side dish to meat, if you eat that, or a tofu steak:)

Cold potato salad

serves 4 as a side dish

 

600g boiled and cooled potatoes

1 can of chickpeas (or 250g soaked and boiled)

6 tbsp lemon juice

½ tsp salt

¼ tsp curry powder

2 tsp white wine vinegar

1 tsp garlic powder (or fresh garlic)

60ml oil

80ml water

a bunch of chives or spring onions

4-5 radishes (optional)

 

Add the chickpeas, salt, curry, vinegar, lemon juice, garlic, water and oil to a blender, and blend until you have a smooth dressing. You can add the water and the oil a bit at a time, till you have the right consistency. It might vary depending on which chickpeas you use.

Cut the cold potatoes in cubes. Chop the onion, radishes and chives and mix it in a bowl. Add the dressing and you are ready to serve.

You can serve it with bread, fresh salad or as a side dish.
