Cold chickpea mash

This dish is a lovely dish to serve on a summer day where you don’t feel like something warm, but still want something filling.

A friend of mine, who was working as a volunteer at the same shaolin temple as me, came up with this recipe. He was not interested in cooking or anything kitchen related, but because we all had to take turns managing the kitchen, he came up with this surprisingly tasty dish. I was impressed with him and I hope he appreciates that i have now shared it with the world. Thank you Joseph.

Cold chickpea mash     

Serves 4 people

 

2 cans of chickpeas (or 500 g of soaked and cooked chickpeas)

1 can of tomatoes

1-2 tbsp oil

2 tsp chilisauce

½ onion

1 tsp dried basil

1 tsp soy sauce

salt if needed

 

Put the chickpeas in a bowl and mash them with a fork. Chop the onion fine and mix it in with the chickpeas.

Add the rest of the ingredients and mix it all together. Check if you need to add a bit of salt in the end.

Serve it with bread, salad or as a hunky dip for chips.
